Heirloom tomatoes with parsley pesto and goat cheese

Our house has been overrun by tomatoes. I have run out of places to store them all. Between the CSA farm, my in-law's backyard garden and the company farm, I shouldn't have to worry about cancer since they say that tomatoes can ward off cancer. So we'll see what happens. So since I have lots and lots of tomatoes, I cannot let them go to waste since so many people have put so much effort into giving me such great vegetables. So I found this recipe on another blog and thought it was perfect. It's an easy and perfect recipe to have for get togethers during the hot Texas summers.

1 part extra virgin olive oil
1 part red wine vinegar
1 handful of parsley
1/2 tablespoon sugar

Put all the ingredients in a food processor or blender.

Pour the vinegarette over the sliced tomatoes. Sprinkle the goat cheese on top of tomatoes and dressing. Voila! Easy and yummy. The recipe originally calls for heirloom tomatoes but I think fresh tomatoes from the farm are just as good in this recipe. I dont' think it would have tasted as yummy if I had just bought bulk tomatoes from the grocery store. I highly suggest that you go to your local farmer's market. Not only will you get super fresh veggies but you'll also be supporting local farmers.
