Tofu Chowder...

It's been a while since I've talked about my adventures in the kitchen so I figured that it's time for another vegetarian recipe on my blog. Tonight I knew that I needed to use up some tofu that's been sitting in my fridge for a while. So I pulled out a recipe that I clipped from our local paper three years ago. It's a southwest tofu chowder.

It's so yummy!

To make tofu chowder you need:

1 block of firm tofu

1 tbsp, olive oil

2 garlic cloves minced

1 red bell pepper

2 cps vegetable broth

14 oz can of diced tomatoes ( I used Hunt's tomatoes with basil)

1 can of corn

1 tbsp dried parsley

Here is what I did.

1. Put the oil in a pot.

2. Sautee garlic and bell pepper for 3 minutes.

3. Crumble firm tofu into pot.

4. Add tomatoes with juice into pot.

5. Add veggie broth

6. Drain corn and throw into pot.

7. Add parsley.

8. Let the chowder simmer in pot for 20 minutes.

Here's a picture of the finished project. I hope you enjoy this recipe. This recipe is so easy and doesn't take a lot of time to prepare. That is perfect for me because life is about to get crazy because I'm about to start classes again. So it's great to have a recipe that's really easy to make, instead of caving into eating fast food. Hopefully I can continue cooking while I work 40 hour weeks and take three classes this semester. We'll see.
