The Life of a Vegetarian

As some of you may know, I have been a vegetarian since March 2008. It's definately a challenge but I always enjoy a challenge. This fall I have enrolled in a local CSA where I get local, organic produce. The farm I get my vegetables from is called Green Gate Farms. Each season I am given the opportunity to buy a "share" of the crop. If I choose to buy a "share" I get a bag full of groceries every week. This week I got a ton of eggplant, sweet peppers, arugala, zuchini, okra and green beans. I split my share with Jason's parents because we usually have more veggies than we know what to do with. So since I had so much eggplant I decided to make eggplant parmesan. It's really yummy and really easy.

I often get the comments of concern of whether my decision is healthy. I think it is perfectly healthy. As long as I consume the right amounts of nutrients I will be fine. I do have a bit of an iron deficiency but that is easily fixable by taking iron supplements. My only dilema is if I will continue the vegetarian lifestyle if and when I get pregnant and if I will teach my children about the vegetarian lifestyle as well. But we'll cross that bridge when we get to it.
